Well it’s that time of year again – everyone’s getting back to school, taking up new activities, and getting ready for a busy fall! One thing that keeps me sane when life starts getting hectic is putting together a mini meal plan for the week, so I know what to buy at the grocery store and I don’t have to stress about meal time along with everything else. I’ve put together a few of our quickest and healthiest options from breakfast to midnight snack that you can prepare in a snap, grab, and go!

Rise and Shine!
I love eggs, but really, who has time to make a full blown omelet in the mornings? (If you do, please tell me your secret…) Pop these egg muffins in the oven Sunday night, and they’re ready to go all week long. Just reheat in the microwave for a few minutes, and you’re on your way!
Lunch Break
Nothing makes an easier lunch option than a good wrap. You can put virtually anything in it! Since I don’t eat meat, one of my personal favorites is this yummy veggie wrap, made with fresh vegetables and a veggie burger for added flavor. Even if you’re not on the veg train, this is chock-full of so many great flavors, you won’t even miss the meat. But if that doesn’t sound so great to you, you can easily add some delicious deli meat and make it your own!
Snackin’ Smart
Let’s be honest – most of us can’t make it through the day without snacking between meals! It’s ok – it’s actually a good thing! Snacking smart throughout the day keeps your metabolism going and keeps you energized. The key is picking healthy snacks that add nutritional value to your daily intake. Throw some dried cranberries, raisins, nuts and seeds in a ziploc bag and shake it up for an easy trail mix-to-go. Buy the individual packs of hummus at the grocery store and throw it in your bag with a pack of mini carrots for a healthy snack. The options are endless – just make sure to mix in your fresh fruits or veggies and you’ll be set!
Dinner Time
One of my favorite go-to meals is a quick stir-fry. It’s so easy to make with whatever you have in your kitchen, and it can be thrown together in a snap! One of my favorite recipes is this Quinoa Spinach and Walnut Stir Fry. Quinoa is a great healthy alternative to white rice, and it soaks up the flavors of whatever you blend it with great!
Midnight Snack
Sometimes I’m up so late past dinner, I get hungry again. I know I’m not alone on this one. Everyone loves cold pizza leftovers, and here’s a quick way to make it yourself – bagel pizzas! Throw them together just like in the recipe, or make it simple with just pizza sauce and cheese. I make mine on bagel thins to save on calories. Just make them ahead of time for lunch, and refrigerate the leftovers for the late night munchies.
